My go-to pork recipe for in the slow cooker.
What you need:
Pork (whole scotch works best for this, but anything else can too if you trim the skin/fat off)
Sweet Potato
Apples
Allspice
Cinnamon
Ground cloves
Ground nutmeg
A bottle of apple cider
I don't measure much of this, it tends to be I adjust all the other larger stuff to fit around the pork.
- Slather the pork in the spices, and give it a good rub in.
- Cut the sweet potatoes into large chunks and cover the bottom of the slow cooker, you want a layer at least 3cm high. Try and get it in a single layer.
- Poor the apple cider over the potato, place the pork on top.
- Core and quarter the apples and place those around the pork (and any more sweet potatoes you might have.
- Try and wait 8 hours while it cooks and the smell tortures you with delicious temptation.
Enjoy!
Left over tip, take some bread, smear the sweet potato over that and fill with pork!
