I think it might've been my first RPG/FPS game and just enjoyed the **** out of it.
I reckon the problem with the pacing is Skyrim is that they don't tie the side stories in well enough, everything is either main story or TOTALLY off track and once you've done the introductory quests for each sideline there's not much to make you want to jump back and forth. There's also not much waiting for you at the end of the chains, I was pretty saddened to find that the boos of the fighters guild still does the same mundane **** jobs as you did when working your way up (less interesting in fact).
I actually kept playing a bit yesterday and kept finding things to do. Quite astounding. Totally agree with your point, these are actual decent missions that i only came across simply in my random travels (see a black icon on HUD, go that direction). It's an inherent problem with open-world sandbox games like this. It'd be pretty cool if you could kind of get some hints about quests you're yet to find, maybe more obvious icons or perhaps randomly generated AI to give you indications (like the messengers).
I made sure I added the Unofficial Patch as the last 2 times I played there were either missions that would never finish because they were broken or other things similar to that.
Only bug i had like that was doing misc dragon slaying missions for some guy in some random town. They wouldn't clear out of my inventory after finishing them. Common issue from what google tells me.
What I find strange is both other times after getting out of Helgen at the start with Ralof he has taken me to the local blacksmiths house to 'get the ball rolling' so to speak with what should be done. This time though, I followed him into the mill area where we talked to his sister.
What I want to know is, is that the way it started for everyone else? Going to the Mill or to the blacksmiths? It was a shock and I wasn't sure if it was because the unofficial patch fixed something or not.
Sure you didn't follow the Imperial soldier? During the chaos at Helgen you're given a choice to follow the Imperial soldier or the Stormcloak soldier. The imperial will take you to his brother (the smith), the Stormcloak will take you to his sister (lumberer). I'm 90% sure that's what happened anyway. Restarted yesterday and this time i went with the Stormcloak soldier, only now realising there was an option.

Also, as for the main story line, I've only just given the Horn of Jurgen Windcaller back to the Greybeards and I am currently level 50
LOL! What have you been doing? I'm no rusher, it took my 150 hours to complete the main quests, but damn! I hope you've been doing other quests in the mean time!
So i started a new game, and made an entirely different character
I actually started to do this but then felt inclined to see if there was more i could do on my original character, which i found out there was! I kept remembering things i was supposed to do, get rid of my wolf blood, still many dungeons i haven't explored, etc, etc.
