Lunch Ideas

Unread postby _Zyklon_ » 20 Mar 11, 8:56 pm

Howdy everyone.

God damn, im so sick of tuna, salad, tuna and salad. Was just wondering what to make for lunch tomorrow (i decided on tuna salad) and thought that it might be a good idea to post in here and get everyone to share some lunch ideas around.

I need some more healthy (and preferably minimally time consuming) ideas for work lunches. I have access to a microwave and toaster.

So, let us know your favourite lunch ideas and hopefully I wont get put off tuna for life!

Cheers

KFC. :D

I've been buying various kinds of flatbreads lately and just piling whatever on one side then rolling it up. Longest part is prepping whatever you want to put on it - chopping onions or tomato, bits of lettuce, sliced meats etc.
Can make it as healthy or unhealthy as you like. Can pile the ingredients on or just smear some peanut butter and honey or jam or vegemite or...

Even Tip Top is making flatbread/wraps nowadays so you've got dozens of options if one doesn't take your fancy. :)

leftover dinners :p
I buy a stack of those microwaveable Enjoyo meals - butter chicken and rice, nom nom nom.

make a chicken Caesar wrap - flat bread wrap, lettuce (whatever kind, normal or fancy), some sliced roast chicken meat, bit of fried bacon, drizzle of that Caesar sauce stuff (i dunno, its found with the salad vinegar stuff.. mayos and whatnot) and some sliced hard boiled eggies, yum yum.
make them in bulk, wrap, keep in fridge. grab and go in the morning.

also, if you have tuna - nothing beats a tuna toasted sammach.
toast some bread, spread tuna, add pepper, slice cheese and some tomato.
:icon14:

Egg and bacon sandwiches/buns, hard boiled egg (mashed) with mayo and lettuce sandwiches, chicken and mayo sandwiches, bacon butties,

if you've got all the time in the world the night beforehand or set aside a night, cook something extra that can be eaten cold or microwaved.
I specifically make certain things purely for work lunches, sausagerolls, pies and whatnot.
oooh something really nice thats eaten cold or hot, cook up some pasta, shells, elbows or macaroni, fry up some bacon and onion in a wee bit of oil, then mix it with the drained pasta, add pepper.

quiche, hot/cold.
your face, needs moar face.

Pasta is pretty god damn easy to knock up.

Plenty of times I have just whacked whatever pasta I have lying around in a pot of water, boil it, mix with sauce (cheesy or tomatoy), throw in some capsicum, olives, salami, fetta and you have a very nice lunch :)

If you're not worried about carbs, nothing wrong with something wholemeal. Like a wholemeal tortilla with seasoned chicken, salads and sprouts etc.

+1 for cooked chook as well. Hard boiled eggs. Or, if you have cabbage, do a cabbage, egg and bacon stirfry. Pretty easy, quick and **** tasty.

I'm in the same boat atm. Starting to get really sick of tuna salad

make own sushi: just uses a small amount of sugar (about 1 tablespoon) for 3 rolls if you make 1 cup of rice (uncooked).

also seconding the chicken idea, and the egg +mayo/salad idea.

throwing in a ham cheese and tomato toastie (easy to put together, but ensure tomato is in middle to prevent sogginess), and brie/camembert+turkey+cranberry toastie. This latter one is epic, but more expensive. Still cheaper than buying a lunch every day though

Little tip if you're into meat with salad as a great standby.

Find a seasoning you really enjoy, and you'll always have a quick meal. I can put this **** on anything in the freezer (Beef, chicken, pork, fish etc), add it to a salad with some light cheese, instant low fat, low carb, protein rich meal.

Cajun spice, (I make my own, but if you live near a USA foods ZATARAIN'S brand is the best premade I've tried) is perfect. I love cajun cooking, so this stuff is gold.

3/4 cup salt
1/4 cup ground cayenne pepper
2 tablespoons ground white pepper
2 tablespoons ground black pepper
2 tablespoons paprika
2 tablespoons onion powder
2 tablespoons garlic powder

It's potent ****, so you don't need to marinate. It's like a rub, just season and cook.
